Spiced Kale Fritters
Makes 4 fritters:
200g Cavolo Nero Kale (stems removed)
150ml milk of choice
100g gram flour
1 tsp paprika
1/2 tsp cumin
1/4 tsp turmeric
Salt & pepper
Bring a pot of water to the boil & put the kale in for about 3 mins
In the meantime, sift the gram flour with the spices into a large bowl & add salt & pepper
Strain the kale & run under cold water until it’s cool enough to handle, then squeeze out the excess water, squashing the kale leaves into a compact ball
Shred the kale while in the ball & then separate it out by pulling it apart with your hands
Slowly add the milk in to the flour & spices whisking to make a smooth runny batter then stir in the kale
LEVEL UP by chucking in some crumbled feta here if you fancy!
Heat a pan with a little oil to medium high & separate the batter into 4 in the bowl
Spoon each portion into the pan and flatten to make your fritter shapes
Cook for 3-5 mins each side until golden brown
Serve on top of mashed sweet potato with fried/poached eggs on top and tomato chutney on the side for a tasty time
