Saucy Udon Noodles with Veggies

Serves 2 - 3

2 packs udon noodles

0.5 cup lukewarm water

1.5 tbsp corn starch

3-4 tbsp soy sauce 

2-3 tbsp honey 

1/2 lime

0.5 tbsp miso paste 

0.5 tbsp sesame oil 

Veggies

(you can use any veg at all; I like red cabbage, savoy cabbage and cavolo nero kale. But its great with peppers, mushrooms, broccoli and all the veggies!)

  • Stir fry your veggies for however long you like/need to. 

  • (When I do red cabbage I shred it and cook it for about 10 minutes with a little dark soy sauce, then I add shredded savoy cabbage and kale and cook for another 5 minutes.)

  • While the veggies cook mix the corn starch, soy sauce, honey, lime, miso and sesame into about a half a cup of water.
    Add your noodles to the veg and then pour over the cloudy watery looking sauce- have faith. 

  • Turn the heat up and stir fry on high for about 3 minutes, turning frequently. The sauce should thicken and caramelise.

  • Split between 2 or 3 bowls and put some chopped spring onion and sesame seeds over the top - this is the real key because now it looks fancy, and delicious.
