Easy Protein Pancakes

Makes 3 large pancakes

1 mashed banana 

1 egg 

1 scoop vanilla protein powder

1-2 tsp flour

0.5 tsp baking powder

You can add blueberries or choc chips too!

  • Smoosh the banana in a bowl - sometimes I add a little splash of oat milk to make it a nice smooth texture. 

  • Beat the egg into the banana.

  • Add the protein powder, flour and baking powder and mix to make a smooth batter. 

  • Consistency check! You’re looking for a thick smooth batter that pours slowly off a spoon. If it seems too thin then add in a little flour/protein to thicken. If it seems like a thick dropping consistency, maybe whisk in a little milk. 

  • Pour a little olive oil into a hot pan and (NB!) get some kitchen roll and wipe the whole base of the pan. This coats the pan with the oil but absorbs any excess so you don’t get crisped up pancakes.

  • Turn the heat down low.

  • Spoon the batter in and spread slightly with the back of the spoon to make big flat round pancakes about 0.5cm thick. It usually makes 3 large ones in my pan, but you may want to do 4 smaller ones in 2 batches. (This is also where you would drop blueberries/choc chips/etc in if you’re using!)

  • Cook for 2-3 minutes until bubbles appear and pop at the surface of the pancake and then flip and cook for slightly less time (maybe a minute) on the other side. Be patient here - do not be tempted to turn the heat up!

  • Eat straight away! I like to put greek yogurt and berries on top but you can go banana PB or maple syrup, whatever works!
