Homemade Granola
4 cups of grains*
2 cups nuts and seeds*
0.5 cup fruit*
0.5 cup honey
0.5 cup coconut oil
1 tsp cinnamon
0.5 tsp salt
*Notes:
I use a cup measure here because it’s quick and easy - it doesn’t matter if you don’t have an exact cup measure, you can use any container or mug so long as you use the same one to measure everything then your ratios will still work out just fine.
For the *grains I usually use organic rolled jumbo oats, but you can use spelt flakes, quinoa flakes, barley flakes - whatever you like! You can also mix and match, just do 4 cups in total.
For the *nuts and seeds I use what I have. I usually fill one cup with with hazelnuts, walnuts and sunflower seeds, and a second cup with pumpkin seeds, chia seeds, flax and sesame. But again - use the flavour you like and mix and match to make approximately 2 cups in total.
The *fruit part is optional, I like some raisins or saltanas added in, but you can use other fruit or no fruit.
Method:
Preheat your oven to 180 and line a large baking sheet with parchment.
Melt the honey and oil in a pan and mix all dry ingredients into a big bowl*.
Pour the melted honey and oil over the other ingredients and mix well.
Tip onto the baking tray, spread it out and press it down gently.
Bake for about 15 minutes - until golden brown. Remove from oven and leave to cool completely.
Break up leaving as many clusters as you like (clusters are life) and pour into an air tight container to store.
*I add the fruit because I like my dried fruit to cook a little and to have that chewy-stuck-in-your-teeth thing going on. But you can add the fruit at the end, or ten minutes into cooking time if you prefer. The joy of making your own granola is having it how you like it!
