CAMPFIRE BEANS

Serves 3 - 4

Oil for frying

1 Onion

2 cloves crushed garlic

1 400g tin tomatoes 

2 tins beans (any type but i like to do 1 barlotti and 1 cannellini)

1 tsp smoked paprika

1 tsp dried herbs (Basil, thyme, oregano, mixed herbs, herbs de prevence, whatever you have!)

1-2 tsp spicy paste (I like chipotle or harissa but any chilli sauce would do too!)

1 tbsp tomato puree

1 tbsp honey/maple syrup

1 tbsp white wine vinegar

  • Dice and fry up the onions for 3-5 mins until soft

  • Add garlic, salt, pepper, paprika and herbs and cook for another 2 - 3 mins. 

  • Add the drained & rinsed beans with the chilli paste and tomato puree and stir to coat. 

  • Pour in the tinned tomatoes, add the honey and vinegar and stir

  • Taste and adjust - adding spicy paste to heat, honey to sweeten and vinegar to sharpen!

  • Cook for a few mins to let flavours develop.

I like to put these beans on sourdough toast with some poached/fried eggs on top, but for a hungrier times I put them on a baked sweet potato with some grated cheese melted over!
