Healthier Banana Oat Muffins

3 bananas (mashed)

2 eggs (beaten)

100ml honey (approximately half a cup)

100ml oil of choice (I use melted coconut)

1 tsp vanilla essence

180g wholewheat flour

50g rolled oats

1 tsp baking soda

pinch of salt

  • Preheat oven to 160 celsius and line a muffin tray with 10 muffin cases

  • Whisk all the wet ingredients in a large bowl until smooth and well incorporated

  • Stir in the dry ingredients

  • Wait a few minutes for the oats to absorb some moisture and the batter will thicken

  • Divide the batter between the cases and bake for 20 - 22 minutes
